Long-Overdue Salad

Dear Readers,

About a year ago I promise to share my salad recipe with you and I just found the picture I took to show with the recipe, so I think it high time to share with you my Sweet Summer Salad.



Ingredients (I apologize for lack of measurements. I kind of just eye-ball it):

Baby Spinach
Asparagus
Blackberries
Apple (I use Royal Gala)
Pear
Red Onion
Blue Cheese (not too soft; you need to crumble it)
Candied Walnuts (I just found these at the grocery store, but you can find a recipe online here to candy them yourself if you prefer)
2 tsp Maple Syrup
1 tbsp Balsamic Vinegar
1/2 tbsp Olive Oil
1 tsp Lemon Juice
Fresh-Cracked Black Pepper

Instructions:

Rinse all vegetables and fruit. Bring water to boil in a large pot. While water is boiling you can Chop up the apples, pears, and red onion and put them in a large salad bowl with the baby spinach.

Using tongs, so you don't burn your fingers, dip the pieces of asparagus in the boiling water for about 10-20 seconds for each stem. Place asparagus in a colander or sieve and run under cold water and place in the fridge to chill.

Put maple syrup, balsamic vinegar, olive oil, lemon juice, and a pinch of the cracked pepper in a clean jar. Seal the jar with its lid and shake it vigorously until the ingredients are well-combined. Set aside.

Chop up the now-chilled asparagus and add to the salad bowl. Add the candied walnuts and crumble some blue cheese on top. Toss all the ingredients in the salad bowl and you can either add the dressing yourself or serve it separately to allow diners to put the amount they desire. (I do it myself so that no one tries to eat the salad without putting this tasty salad dressing on first).




Eat and enjoy! Try not to hurt yourself from being swept off your feet by this one!

Spontaneous Kitchen Creations #1

Dear Readers,

I would like to share with you something that is most delicious. This morning I made this Havarti and Sautéed Red Pepper Omelet with Cilantro, Parsley, Green Onions, Fresh-Cracked Pepper and a bit of salt. The Peppers and Omelet were cooked in a little bit of butter. Mmmm omnomnom.

Awaiting the Day

Dear Readers,

It is almost my Birthday, which means that I will soon be 21. How strange is that? It feels like it wasn't long ago that I was tiny enough for my brother to pick me up and swing me onto his shoulders. The image of him trying that now is quite amusing. Take a moment. Enjoy.

I will hopefully get a hold of some pictures of the festivities once they occur and will upload them here. Because I have no internet access at my house it will take some time for things to be added here. The computer I use at work is...special...to say the least. To write this I must first write the sentences and then wait a minute for the words to show up on the screen, letter by letter. It's alright though. I don't mind the wait... most of the time.

I hope you are all enjoying June. Crazy that it is almost done since it only just started. Time is wild.

Reaching My Peak

Dear Biological Clock,

I am only 20, and technically that means my peak time of fertility is in a year or two. Seriously though, bio clock? You need to keep up with the times. Your insistence on being caught up in the ways of back-in-the-day is becoming quite aggravating. If you had your way girls would be getting married at the age of 12 again.

Dear Sunday, May 3rd,

Thank you for being such a gorgeous day! I thoroughly enjoyed getting to play in the sun with bubbles and sidewalk chalk. Today's Abandoned Furniture Photo Hunt was particularly successful, and I was also able to snap some shots of the beautiful new flowers that are blooming on campus. A Very Sincere Apology

Dear Readers,

I would like to apologize for being a highly un-devoted blogger. I have been neglectful of my readers (thank you to the 3 of my followers by the way...funny term that...followers...like I'm a religion!), and this simply will not do.

My lack of posts had nothing to do with a lack of events or show crazinesses; there has been plenty of both. I just did not take that little moment out of my day to keep my little nook of letters updated. I am sorry, and though this may very well likely happen again, I can at least promise a Period of No Neglect for a bit.
